Blueberry Ice Cream Muffins Recipe

A Yummy recipe for fun blueberry ice cream muffins, serve topped with whipped cream and blueberries.

Ingredients

Muffins
2 cups flour
1 egg
2 tablespoons oil
2 tsp baking powder
1 cup blueberries
2 cups vanilla ice cream, softened
Topping
1/2 cup heavy cream, whipped
blue berries

Directions

Preheat oven to 425 degrees F.

Combine flour, egg,baking powder, oil and ice cream in bowl; beat until smooth. Stir in blueberries.

Fill lined muffin cups 3/4 full.

Bake for 20 to 25 minutes or until golden brown. let cool

Just before serving top with whipped cream and garnish with blue berries.
