This deep fried fish batter makes a nice crispy coating.
1 cup plus 2 tablespoons flour
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon garlic salt
1/4 teaspoon pepper
7 ounces of your favorite beer
Oil for frying
Cut the fish fillets, if necessary, and pat dry with paper towns and then set aside.
In a large mixing bowl, add the flour, salt, sugar, paprika, garlic salt and pepper and mix until combined.
Add the beer and egg and mix until smooth and there are no lumps.
Let the better rest at room temperature for 30 minutes.
In a large frying pan or fryer, heat the oil to 350 degrees F.
Dip the fish fillets into the batter, coating evenly and then drop into the hot oil.
Cook for 5 to 6 minutes or until the fillets are golden brown.
Remove the fillets from the oil, draining them on paper towels. Keep warm in the oven at 200 degrees F until ready to serve.
