Mexican Macaroni Casserole Recipe

Even the kids will love this macaroni casserole recipe.
1/2 cup corn
1/4 cup diced red pepper
1/2 cup cheddar cheese, grated
1 cup milk
2 Tablespoons all purpose flour
Bring a medium saucepan of water to boil.
Add pasta to boiling water. Boil, uncovered, for 6 minutes.
Drain pasta and set aside.
Place milk and flour in saucepan, whisk until no lumps remain.
Add corn and red pepper in same saucepan. Stir over medium heat for 1 minute, or until thick.
Return pasta to pan, Add half the cheddar cheese. Stir until all ingredients are thoroughly combined and heated through.
Divide between two serving bowls. Serve warm, topped with remaining grated cheddar.
