Raspberry Crumb Muffins Recipe
A Delicious recipe for raspberry crumb muffins. These are a very yummy snack.
1/3 cup sugar
3 Tbsp flour
2 Tbsp unsalted butter, melted
2 cups flour
¾ cup sugar
2 tsp baking powder
½ tsp baking soda
½ tsp ground cinnamon
Grated zest of ½ lemon
¼ tsp salt
1 egg, beaten
5 Tbsp, unsalted butter,
1 cup buttermilk or (1 cup regular milk with 1 Tbsp of lemon juice, let stand for 5 minutes)
2 cups Raspberries
Preheat oven to 375 degrees. Grease or line 12 muffin cups.
For the topping. In a small bowl, stir together the sugar, and flour. Stir in the melted butter until crumbly. Set aside.
For the muffins. In a bowl, stir together the flour, sugar, baking powder, baking soda, cinnamon, lemon zest and salt. Add in the egg, melted butter and buttermilk. mix until evenly combined. Gently Stir in berries.
Spoon the batter into the muffin cups. Top each muffin sprinkling with the topping..
Bake 25-30 minutes until golden and a toothpick inserted into the center comes out clean.
