Roasted Dill Potatoes Recipe
This roasted dill potatoes recipe make a great side dish to chicken, fish or meat.
4 medium potatoes
3 Tablespoons grapeseed oil
1 1/2 teaspoons sea salt
1 teaspoon freshly ground black pepper
3 Tablespoons Dill, chopped fine
Preheat the oven to 400 degrees F.
Peel and cut the potatoes into cubes, rinse with water and place in a bowl with the oil, salt, pepper, toss until the potatoes are well coated.
Transfer the potatoes to a baking pan and spread out into a single layer.
Roast 45 minutes or until browned and crisp.
Flip twice during cooking in order to ensure even browning.
Remove the potatoes from the oven, toss with dill, season with salt and pepper to taste, and serve hot.
