A healthy pepper and tomato bulgur salad, served with a light lemon and oil dressing.
2 cups bulgur wheat
2 cups boiling water
1 bunch green onion, sliced finely
1 medium onion, diced
2 cups bell peppers (mixed colors), diced
1 bunch parsley, chopped finely
2 cups cherry tomatoes, quartered
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 lemons, juice of
salt and pepper, to taste
To prepare bulgur:
Place bulgur in a large mixing bowl.
Bring water to a full boil, and pour over bulgur.
Cover and let stand 30 minutes or until all the water is absorbed.
In a small bowl, combine oil, vinegar, lemon juice
Into a large serving bowl, add onions, parsley, peppers and tomatoes to the bulgur.
Drizzle dressing over top and mix well.
